Can you try clicking the Disable button on your Airbnb channel and the re-enabling it? You might have to resign into Airbnb.

Emails sent by triggers can be resent from the "Emails" tab on the booking.
Ad-hoc emails can't be resent, but you can find them in the communication history and copy the contents into a new email.…

Yep! You can use "Everything but" to match any booking that does not have a particular set of tags.
