Is there a way to limit the amount a guest can put on their credit card?

Just wondering how to limit the amount a guest can put on their credit card. We have a lot of reservations over $10k that are done a year in advance so there is a lot of time to wait for them to mail a check. Alternatively thinking of not offering credit card option for reservations made more than say 6 months out. Just trying to limit credit card transaction fees..... Ideas?
